Callen requested some protein bites for breakfast during state testing. I know I have a pumpkin one and chocolate chip oat but he really loves lemon so I gave these a shot. You can't deny that there isn't protein powder flavor to them but they are lemony and they are high in protein. We like them and they almost have a lemon poppyseed muffin feel.

1 cup oat flour
2 Tbsp coconut flour
3 Tbsp honey or agave
1/4 cup coconut oil, melted
2 Tbsp chia seeds
1 scoop vanilla protein powder
1 TBSP fresh lemon juice
1 TBSP lemon zest
Mix ingredients in a bowl. Let sit for a few minutes and roll into 1 TBSP balls and store in the fridge in a container.
