Canned Peppers

  • 2 cups white vinegar
  • 2 cups apple cider vinegar
  • 1 teaspoon mustard seed
  • 1 teaspoon celery seed
  • 1 pound banana peppers, tops removed then sliced into rings

  • Bring the vinegar, mustard seed and celery seed to a rolling boil.
  • Pour brine over peppers to within ½" of the top.
  • Wipe off the rim and put lid and ring on. Allow to cool then put in the refrigerator.
  • Leave for 1 week or longer to let peppers marinate (if you can wait that long!) 
  • You can also follow proper canning procedures and then process them in a water bath canner if you prefer.

Bird Seed Bowl

Mix together: 
1 Tbsp chia seeds 

1-2 scoops of greek yoghurt (can omit)

Toppings:


3 Tbsp hemp seeds
berries of choice 🫐🍓
I use 1/2 cup Blueberies 🫐+ a handful of raspberries

One banana, sliced 🍌
2-3 Tbsp peanut butter
Drizzle of honey 🍯

Marinated Red Onions

  •   1 small red onion
  •   ¾ cup Extra Virgin olive oil
  •   1 tablespoon dried oregano (not ground)
  •   1 tablespoon red wine vinegar
  •   1 to 2 teaspoons of high-quality balsamic vinegar (optional but highly recommended)
  • Thinly slice the red onion and place in a low bowl.

    In a separate bowl, stir the olive oil, red wine vinegar, balsamic vinegar, and dried oregano together to combine well. Pour the mixture over the onions, making sure they are submerged.

    Let sit on the counter at room temperature to marinate for 12 hours before using. Keeps for 2-3 days unrefrigerated.

    **I sometimes omit the oregano and add a generous tsp of kosher salt**

Pizzeria Salad

Chopped lettuce
Chopped cherry tomatoes
Chopped pepperoni
Sliced olives
Sliced jalapeño 
Finely shredded mozzarella 
Sprinkle with red pepper flakes and oregano

Chicken Bacon Cesar Salad (with Homemade dressing)

🥗Chicken + Bacon Caesar Salad🥗
5 heads of romaine, chopped
herb grilled chicken, chopped
1/2lb crispy bacon, chopped
quick croutons 
caesar dressing 
parmesan cheese 

🧄Caesar Dressing🧄 
1 cup mayo
1 cup sour cream
1/3 cup @garlic.expressions
(you can add more garlic expressions to thin the dressing to your liking) 
1.5 tsp worcestershire 
1.5 tsp anchovy paste
1 clove of garlic, grated (or 3/4 tsp garlic powder)
2 tsp dijon mustard
1/3 cup grated parmesan cheese
juice of 1/2 lemon
lil’ pinch of salt
lots of black pepper

1. Simply whisk all ingredients together. Store in airtight container in fridge. I pour in extra @garlic.expressions depending on the consistency of the dressing I want 

🌿Herb Grilled Chicken🌿
2lb chicken tenders 
2 Tbsp olive oil
1/2 Tbsp dried parsley + dried basil
1 tsp garlic powder, onion powder + oregano

1. Grab a big bowl, add the chicken tenders. Drizzle with olive oil + seasoning. Toss to coat. Let marinade in fridge for at least 2 hours 
2. Cook over medium high heat until golden brown on each side + cooked through 

🥖Quick Croutons🥖
1 baguette cut into bite size pieces
olive oil
1 Tbsp dried parsley
1 tsp garlic 

1. Toss bread with olive oil + spices 
2. Bake at 375° for 12-15 minutes or until golden 

To assemble the salad…
1. Add the chopped romaine to a large bowl
2. drizzle lettuce with a few tablespoons of caesar dressing 
3. Toss toss toss
4. add a little shaved parmesan to coat 
5. add croutons, chicken + bacon 
6. a little more parmesan 

🍋Serve with a wedge of lemon to squeeze on top of each portion

Crispy tofu

2/3 of my kids are super picky and one of them hates meat. But they all devour this crispy tofu. We're almost a 2 pack of tofu family!

RECIPE:⠀
1️⃣ cut a block of firm or extra firm in half and press between two plates with paper towels + a jar or pot on top for 20-30 minutes to release the excess liquid.⠀
2️⃣ cut the tofu into 3/4-inch cubes and toss in cornstarch or arrowroot starch + a little salt.⠀
3️⃣ fry in high-heat oil (like avocado oil) in a skillet over medium-high heat for a few minutes on each side, until golden 🤌🏼⠀
4️⃣ serve immediately or refrigerate in an airtight container for a few days + reheat in a skillet, oven, or toaster oven!⠀

I served mine in a grain bowl with quinoa, roasted broccoli, shredded carrot, thinly sliced radish, sliced avocado, and sriracha ranch dressing! OH SO CRISPY.⠀

PB Blueberry Bowl

3 Tbsp Chia Seeds
1/3 cup Oats 
Hot Water 
Drizzle of Maple Syrup 
1 heaping Tbsp Peanut Butter 
1 cup blueberries 
1/2 Tbsp hemp seed hearts 

In a bowl, add the oats + chia seeds
Cover w hot water, pour 1/4 above oats/seeds
*Let sit 10 min for chia seeds to bloom*
Warm the peanut butter, and blueberries 
Add maple syrup to the thickened chia/oat bowl 
Pour in the melted peanut butter, stir 
Add in the warm blueberries + top with hemp seed hearts
