Ingredients
Seasoning
- 2 tsp chili powder (preferrably 1 tsp ancho chili powder 1 tsp regular)
- 1 1/2 tsp ground cumin
- 1 tsp ground paprika
- 1/2 tsp ground coriander
- Salt and freshly ground black pepper
Fajita filling
- 2-3 boneless skinless chicken breasts , sliced into 1/2-inch thick strips (slice extra wide strips in half)
- 1 of each red , green, yellow and orange bell peppers, cored and sliced into strips
- 1 large yellow onion , halved and sliced from top to root
- 2 cloves garlic , minced
- 3 Tbsp olive oil
- 2 Tbsp fresh lime juice
- 3 Tbsp chopped cilantro
Season sliced chicken with seasoning mixture. Cook Chicken and veggies separately and combine. Toss with chopped cilantro and lime juice. Serve in warm tortillas with toppings (sour cream, avocado, salsa, cheese, etc.) makes great salad leftover
